Sorry guys today has been a really bad post day. The mall was pretty good, I had roast pork with veges and gravy for dinner with this amazing hot chocolate cupcake for desert. Ohhh it was so good it had marshmallows through it and was filled with chocolate sauce with tonnes of pink icing!! Yum!!
I am feeling anxious at th moment because when I got on the scales after tea (yes am getting on them very day, not meant to...) and it read 47... I know it's a good thing but it feels terrible... Oh well it is probably just water weight and will go away in the morning, well I hope so, just wasn't expecting it
I am so glad school is over for the week and I have done al my homework so I have the weekend off! Yay! No stress for two days!! Wow yay it's only three weeks until the school holidays! Can't wait, even though I have to watch Rs soccer tournament for a week but it will still be fun I guess!
I am so tired school takes it toll on me. By the end of each week I am so dead! Haha sleep in tomorrow Saturday, and tennis starts next weekend!! Yay can wait!
I think I will be making more banana cupcakes tomorrow, they were soo good!!

Iced banana cupcakes :) and recipe...
Yay my cupcakes are all done and iced!! I took these pics yeaterday and today there is only now three left!! well our visters had one each so that is 8 gone, and I had two last night (Iknow I know but they are just soooo good!) and one in my lunch today. But ya I will have to make some more soon!!
Muffins
2 cups self-raising flour
1/2 cup Chelsea Caster Sugar
1/2 tsp salt
100g butter
1 cup milk
1 egg
1 tsp vanilla essence
1 cup (2 or 3) mashed bananas
Chocolate Icing
1 Tbsp softened butter (optional)
1 1/2 cups of Chelsea Chocolate Icing Sugar
Hot water
Optional - Extra sliced bananas to decorate.
Method
Turn the oven to 220°C. Stir the flour, Caster sugar and salt together with a fork.
Melt the butter, remove from the heat, add the milk, egg and vanilla and beat well with a fork.
Mash and measure the bananas. Stir them into the liquid mixture and mix well. Add to the dry mixture and fold everything together carefully until all the flour is dampened; stop before the mixture is smooth.
Line a cupcake tray with paper cupcake cases. Spoon mixture into the cases and bake for 12-15 minutes or until they spring back when pressed in the centre. Cool on a wire rack.
When cool, decorate with chocolate Icing and top with banana slices (optional).

Add butter to icing sugar. Add enough hot water to combine when mixed.

Cupakes
Still feeling kind of down after Dad left this morning but I will see him on Thursday!! Yay. I walked down to the supermarket and back to get some caramel (and shampoo) so I could make my chocolate caramel muffins! They are soo good and easy to make, I just make a normal chocolate batter up and put a big blob of caramel in the middle!!
Tinned caramel...Amazing!!
Finished cupcakes such a shame as they sink when you take them out of the oven, oh well...

After these came out of the oven we went are watched my brother R play futsul (indoor football/soccer) they sadly lost 9-2... But they could of won but the ref wasn't very good and gave the other team 13 penalties in total and a whooping 1 to us... and he wouldn't of even gave that to us until he realised how much pain my brother was in, he was crying, and now his knee is very red and swollen. Don't blame him. The other team are very good at faking falling over and acting like it was our fault when it wasn't!! one of the dads videoed it and we didn't even touch him but they still got the penalty. And our goaly broke his thumb half way through but the ref doesn't care. But he couldn't play for the rest of the game so we got a sub from the other team who let all the goals in!! And they were very pushy as well and I over heard a mum from the other team saying how embarrassing it was for her to watch them!! Anyway that's my rage over!!!
We are going to my grans house for tea tonight so that will be nice, I love my gran soooooo muucchh!!!! xoxo yay!!
